Fresh Peach Pie

We live in the South of course and are very fortunate to live close to the Cherry Creek Peach Orchard. So every year we look forward to getting that message ......Cherry Creek Peaches are in! Just as soon as the news arrives we head over to Cherry Creek to pick up a basket of fresh picked peaches. Peaches usually comes in first, then the nectarines. This weekend when my husband picked up a basket of peaches and nectarines, there was a little note with a Peach Pie recipe. The peaches are so sweet and juicy, they don't need any enhancement, but since we have plenty of fresh ones to slice and eat, we're having the pie for dessert today. Peach Pie Five or more, peeled and sliced peaches 1 prepared Graham cracker crust 1 1/2" cups of water 2 Tablespoons of corn starch 1 small box (3 oz) of Peach Jello 3/4 cup of sugar Combine the water, sugar and corn starch in a sauce pan and heat until boiling. Stir often until the mixture becomes thick and clear. Remove from heat and add the Jello, stir well until the Jello dissolves. Arrange the peach slices in the pie crust and pour the filling over the peaches. Refrigerate at least 4 hours before serving. You can turn the plastic top from the Graham cracker crust up side down and make a top out of it. Slide into the frig and wait)) Delicious and super simple. Topped with fresh whipped cream, or even Cool Whip if you're in a hurry. I did substitute the sugar with a sugar substitute and used sugar-free Jello ....no perceivable difference in taste or texture to be significant.
